Honey is a 100% natural pure product. Any other product that is not like this is simply not honey.
Precisely because it is a natural product, honey can crystallize and come in a viscous, grainy or solid form. This is due to several reasons, among which are the temperature to which the honey is exposed in the home, or when glucose (one of the 3 components of honey) precipitates.
This transformation does NOT cause the properties and flavor of honey to be lost.
Its low water content (over 18%) prevents the generation of bacteria or microorganisms as long as the jar is sealed. Also, with a PH between 3 and 4.5, it is not a very pleasant place for these microorganisms.
The ancient Egyptian pharaohs already enjoyed this delicacy. Different finds of vessels have been found inside Egyptian sarcophagi. It is also one of the few food products in history that has not been altered, and is still as enjoyed by the pharaohs.
